Chef: John Paidas

Executive Chef John Paidas grew up in Baltimore with an interest in cooking that started very young. His father recounts a story of him crying while watching live crabs being steamed, and then smiling while eating them. In 2006, after graduating from The CIA's Bachelor’s Program, John moved to Aspen where he began working at The Little Nell.  Five years later he was persuaded by close friends to move to New York City.  John first had the privilege of working at Le Bernardin for three years, when a former boss was beginning to build Charlie Bird in the West Village.  Never having opened a restaurant, the experience to see it designed, and come to life before his very eyes was more than enough motivation to get John on board.  Beginning as a Sous Chef, and leaving years later as the Chef de Cuisine, it was time to break out and find a kitchen of his own. After meeting John, tasting his food, Contrada was happy to hook this remarkably engaged Chef.  The menu is designed to warm your hearts, fill your stomachs and – ideally – make you smile; and although it’s inspired by a Mediterranean background, we still cater to the good ol' Americans that crave a great burger with some old bay french fries!!!  We hope to see you soon.

Owner: Eric Anderson

Owner Eric Anderson came to NYC from food-obsessed Sonoma County, to become an academic. Instead, after graduating from Columbia, he started developing and building affordable housing, a path that led him to control a space in the East Village wherein - with Gabrielle Hamilton - he co-founded Prune in 1999. Watching Prune for a decade he decided to open more places, building each around unrecognized talent and grounding each in their community. Thus, in 2012, he opened Calliope in the East Village and Spinster Sisters in Sonoma County, a restaurant that was recently named one of the 100 best wine restaurants in the Unites States by Wine Enthusiast Magazine. He looks forward to opening new food ventures outside of Manhattan, ideally in areas where affordable, ambitious food is otherwise unavailable.
